I believe he made his first appearance as a biker on Chrissy's cigarette run.

Im sure its the same guy who appears a season later hanging about the store, talking about how he would take care of his mother with the lupus.

By the last part of season 6 he appears to be one of Tony's main men, driving him down shore.

I think you are talking about Dante Greco. He served as Tony's bodyguard for a while and was at the safe house in the finale.

Any idea who the other guy is that Paulie fights about the cat with. He's playing cards with Benny when Paulie comes in to offer the barbers scissors.

Not sure if he was ever said whether he was made.
Walden Belfiore is the other guy. He was at the safe house as well.
The character development in the last season was very rushed for many of the characters, so it is hard to say whether any of these guys were made.

I always wondered how Melfi's shrink didn't recognize Tony in the parking lot.

Ok it was meant to be dark, but pretty sure Melfi's shrink knew who Tony Soprano was. They played him out to be obsessed with mobsters, how he called the NY situation lol.
