Rare meat? Raw meat? Not for me, thanks. And especially not in my meat sauce! Never was a big carpaccio fan. I like my hamburgers medium to well-done. Roast beef, on the other hand, should never ever be overcooked. (Now I'm thinking of Yorkshire pudding and/or toad-in-the-hole!) But, as they say, each to their own taste. Speaking of sauce, tonight, around 2:AM I made the gravy. A lovely marinara sauce, adapted from a recipe in The Arthur Avenue Cookbook. Still wish I could have had fresh parsley, though... It's after 5:AM, and my hot sausages should be just about thawed. Time to braise them (that'll take around half an hour - I don't fry them) then add them to the sugo. And, to a certain well-respected member of the BB who (justifiably) thinks I cook only Italian food - not at all. (Though I do love nearly all types of Italian cuisine.) I cook several Asian dishes, make some nice curry (both Indian and Thai styles) and have a passion for American diner-style food (among other things). The kitchen is a diner - but that's another story for another time. Hey, Don Malta - great thread! Grazie!Signor V. ____________________ The Artie Bucco of the GangsterBB

Mig, what's wrong with rare??? I love medium/rare steak. I don't mind if my burger is a little rare, but not too rare. Geez, I'm realizing that the variety of food I cook is so limited compared to some others here. And, the older I get, and now that I'm by myself, I cook much less. If I had to pick one thing that I think I've "perfected" to my taste anyway, is my tomato sauce. It actually took a few years to get it right. Know what I mean? It's funny how the ingredients can be basically the same as say, my mom or mother-in-law's, yet each person's sauce tastes a little different. As far as cooking Chinese food or any other ethnic food, I am far from experienced. I guess I'm basically a Italian-American gal when it comes to cooking. TIS

For me, meat can't be rare enough. I will also eat it raw. Me and Mr. Babe used to like to buy the entire shell of beef. We would have the butcher cut it into steaks and leave the tails on. When we got home, we would cut the tails off and put them through a grinder to make our own ground beef. We would put a little onion salt on it and eat it raw. It's really the only safe way to eat raw ground beef, although we will have carpaccio in a good restaurant.
Roasts, steaks, any sort of beef, it has to be rare. My mother likes her meat medium, so we've learned to segregate hers and cook it longer, since she doesn't even like to LOOK at ours.

And you sleep in a coffin and get a burning feeling every time holy water is sprinkled on ya. I've known you for how many years, and this is the first time that you noticed?? Next time I see you I'm gonna bring a garlic necklace.
