BTW - I'm definitely looking into the "Buy 2 get 1 free" sale at Toys 'R Us this week, I'm thinking about picking up some new PS3 games.

I played a demo of
Folklore...and it's pretty sweet. It's a drastically different take on the adventure/RPG formula. I can't vouch for the final game, but it may be worth a look.
Heavenly Sword is an AWESOME game...but you can beat it in a day.
I've already vouched for GRAW 2. DEFINITELY pick that one up.
I had considered
SC: Double Agent for PS3...but I didn't get it because I have it for my PS2. I know the PS3 version is different (different missions), but its the same basic story, so it's hard for me to justify a $60 purchase.
I pre-ordered
Assassin's Creed a week or so ago. I traded in a bunch of old PS2 games, and it paid for itself.
The game looks absolutely awesome. I can't wait for it to come out.
