It's truly eye opening to watch the DVD with Coppola's commentary on. You'll hear him say things like "I was almost fired after this scene," or "The entire cast was almost let go on the day we filmed this part." He also says things about the studio wanting to base the film in the 1970's rather than the 40's-50's. Thank the great good Lord Coppola and Puzo got their way. It may offer a little insight, though, into why so many movies are so bad today. Possibly too much input from studios/producers?
