Zia, that gummy texture you noticed is because of a special ingredient called "Salep"(English) or "Sa'lab"(Arabic). That prevents the ice cream from freezing to hard ice and at the same time delays the melting time. It is a little bit sticky and if you notice the ice cream stretches when you get some if it with spoon. When I was trying to make ice cream I just didn't know why mine froze as hard ice or ice chips at best. You have no idea how I got that secret ingredient out of one of those professionals!
