Quote:
CALVIN TRILLIN does not like turkey. He has called it “basically something college dormitories use to punish students for hanging around on Sunday.” In 1981, he suggested in The New Yorker that Americans gather around the Thanksgiving table for an unlikely substitute: pasta carbonara. He imagined that it was served at the first Thanksgiving, confounding both the Indians and the Pilgrims, who declared it “heretically tasty” and “the work of the devil.”

This has yet to catch on. But he did capture something of the spirit of carbonara.

Unlike healthy but often bland turkey, it is not a puritanical dish; it is a deli egg-bacon-and-cheese-on-a-roll that has been pasta-fied, fancified, fetishized and turned into an Italian tradition that, like many inviolate Italian traditions, is actually far less old than the Mayflower. Because America may have contributed to its creation, carbonara is Exhibit A in the back-and-forth between Italy and the United States when it comes to food.

Carbonara also inspires strong, almost religious, passions, particularly about what exactly it is. Mr. Trillin’s recipe — pancetta, fontina and prosciutto — would be scoffed at in Rome. But according to one Italian food historian, there are at least 400 versions, from the most classic Roman to variations that are delicious but drive traditionalists mad.

Though Mr. Trillin did not address the subject, carbonara can be tricky to make well, partly because it is so simple: at base, egg, cheese, cured pork, pasta and black pepper. There is little margin for error. I learned this to my great embarrassment at a poolside party a few years ago with a bunch of posh Italians and their sunburned, hungry children...

Winter is Coming

Now this is the Law of the Jungle—as old and as true as the sky; And the wolf that shall keep it may prosper, but the wolf that shall break it must die.
As the creeper that girdles the tree-trunk, the Law runneth forward and back; For the strength of the Pack is the Wolf, and the strength of the Wolf is the Pack.

I've had brisket in Texas and it was good, but there's nothing like a New York deli-style brisket. Mmmmmmmm.

The only tourist deli that I REALLY miss is the old Second Avenue deli. The real one, you know, on Second Avenue whistle.

The company owned the Jewish funeral home right next door, Gramercy Park chapel. That's closed now, too. But I was in that place at least twice a week for years. So it was either Second Avenue deli or that great Ukrainian diner, Veselka. I'm gaining weight just thinking about it! lol

I miss Rattner's. Katz's Deli is still worth a trip, though.

You'll love this article, and this site. I turned Turnbull onto the site a few years ago when he was looking for info on the old Elpine.

Cool. Interesting article; thanks for the link.

If I'm not mistaken, Meyer Lansky used to hold court there (but maybe in the one on Delancey Street).

Okay, so, today I pulled my pumpkin (from the front stoop; no need for comedians lol) and was wondering... it seems good still, so, any suggestions on what to make with it? I never cooked w/ fresh pumpkin before. It's usually out there until it rots (or Easter, whichever comes first)

I studied Italian for 2 semesters. Not once was a "C" pronounced as a "G", and never was a trailing "I" ignored! And I'm from Jersey! tongue lol

Can't help ya with a recipe either but can suggest you remove all the seeds, put them on a cookie sheet and salt and bake them in the oven for awhile.

I used to love to eat them like that.

We had a big graduation party for my son this weekend. My wife and I made pulled pork, seasoned with cider vinegar and brown sugar. She made a pasta salad and antipasto too. Most of the food was catered by my brother-in-law, who made fettucini alfredo, homemade meatballs and sauce, chicken francaise, sausage and peppers, green beans in oil and garlic and mashed redskin potatoes with pepperjack and colby. Add the cakes, pies and cookies along with cold bottles of Yuengling lager, Guinness and Moosehead, and the result is a few extra unneeded pounds.

My daughter found a Groupon for a new restaurant in our area. Four entrees and four desserts for $45! For $10 more, we could have added wine, but decided that it might be a very cheap house wine, so we skipped it.

The food was delicious. I had veal saltimbocca and a slice of cheesecake and then waddled to the car. We will definitely go back!

Anyone else try the new Talenti Gelato?? I've tried a variety of flavors and they're all delicious. I especially like the Sea Salt Caramel, although I also enjoy the chocolate as well as the vanilla.

This past Sunday I made a recipe that was sent to me. Ipoured 7 ounces of tomato sauce in a crockpot, layered half a head of sliced cabbage and 8 ounces of sauerkraut and a finely chopped onion, topped it with a pound each of ground pork and very lean ground beef, covered that with the rest of the cabbage and more tomato sauce, salt, pepper and 10 oz. of water.

I served it over rice. It was the perfect Sunday football dish to welcome Autumn.

Today for some reason a chap at work had some extra hot pickle made from the Naga pepper and he was daring folks to have a little dip. Being quite fond of spicy food but obviously having lost my mind for a bit I had some. Whoosh!!!!

My mouth burned for an hour and I hiccupped violently for ten minutes. I only had a tiny dab on the end of my little finger.

Never again, unless somebody bets me good money to do it..... tongue

Several years ago I beat my addiction to E.L. Fudge sandwich cookies. Now I might be becoming addicted to Nutter Butter cookies.

Klyd, if you're ever near a Miller's Ale House, you would love their dessert called Captain Jack's Nutty Brother. It's an ice cream cake and this is the description on the menu:

Nutter Butter® Cookies, Fudge & Vanilla Ice Cream, Topped with Chocolate & Peanut Butter Sauce.

Sounds great. I love the double doses of both peanut butter and chocolate.
